  • 1 pkg (10oz) frozen lima beans
  • 2 tblsp butter
  • 4 strips bacon, cut into 1/4 inch slices
  • 1 medium red onion, chopped
  • 1 medium sized bag frozen corn kernals
  • 1/2 cup chicken broth
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup heavy cream


Servings 8


Step 1

Cook lima beans accoring to pkg directions. Drain and set aside. Thaw corn under running water in a colander and set aside. In large skillet add butter and bacon. Cook until bacon starts to brown, about 3 minutes. Stir in onion and cook for 10 minutes, stirring occasionally. Add corn, broth, salt, pepper and lima beans. Simmer uncovered 5 minutes, stirring occasionally. Stir in cream and heat through. Serve.
