Coconut Chocolate Chip Cookies

Ingredients
- 1 1/2 c all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 c unsalted butter
- almost 1 c honey
- 1 1/2 tsp vanilla extract
- 1 pkg instant coffee
- 2 large eggs, lightly beaten
- 3/4 c shredded coconut
- 1/2 c toasted pecan bits
- 1 c semisweet chocolate chips
- 3/4 c white chocolate chips
- 1 c dried cherries
- 2 1/2 c old-fashioned oats

Step 1
Preheat oven to 350.
In a bowl, whisk together the flour, baking soda and salt
In another bowl, use and electric mixer on medium speed to beat the butter and honey until light and fluffy about 5 min. Beat in the vanilla. Add the eggs and coffee pkg and beat until blended, about 1 min. Add the flour mixture, 1/2 c at a time, until blended and no flour shows. Add the coconut, pecans, chocolate chips and cherries. Beat on low speed until blended. Add the oats and continue to beat until blended.
Drop by rounded tablespoonful onto a baking sheet, leaving at least 1 inch between. For chewy cookies, bake until light golden, about 11 min. For crisp cookies, bake until golden brown, about 14 min. Makes about 4 dozen cookies.
