White Bean and Smoked Sausage Soup

Ingredients

  • 4 cups chicken broth
  • 2 potatoes, peeled and diced
  • 4 carrots, peeled and diced
  • 1 onion, chopped
  • 2 ribs celery, diced
  • 2 cans ( 14oz.) white beans, drained
  • 1 lb. smoked sausage, chopped
  • 1/4 tsp. cayenne pepper
  • 1 tblsp. Worcestershire sauce
  • 1/4 cup fresh parsley, chopped

Preparation

Step 1

In large saucepan, boil the potatoes, carrots, onion, and celery in the chicken broth until tender. Add beans, sausage and seasonings. Salt and pepper to taste. Bring soup to a boil, then reduce to a simmer for about 45 minutes.
