Spinach Brownies

Ingredients

  • Preheat oven to 350F
  • 1 c. flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 2 beaten eggs
  • 1 c. milk
  • 1/2 c. butter, melted
  • 1 c. chopped onion
  • 1 lb. shredded cheddar cheese*
  • 1 pkg. frozen chopped spinach, thawed & drained

Preparation

Step 1

Mix flour, salt, baking powder. Add eggs, milk and butter; mix well. Stir in onion, cheddar cheese and spinach. Put in a 9"x9" baking pan (I grease the pan; don’t know if I’m supposed to but I figure it can’t hurt).

Bake for 35-40 minutes. Cool. Cut into squares. If there are leftovers, keep them in the fridge.


*Me being me, I add ½ tsp of nutmeg if I’m using cheddar. I just like the way they taste together.
