Oven Roasted Vegetables with Herbs

Ingredients

  • 3 sweet potatoes
  • 3 white potatoes
  • 6 carrots
  • 2 onions, peeled and cut into wedges
  • 1 head garlic, separated and peeled
  • 1/4 cup minced rosemary
  • 1/4 cup minced thyme
  • 3 tblsp olive oil

Preparation

Step 1

Cut all vegetables into bit sized chunks. Heat oven to 400. Toss all together until well mixed. Place mixture on large rimmed baking sheet and bake for 1 hour or until browned, stirring occasionally. Add salt and pepper to taste.
