Ingredients

    can (15 oz) salmon - I use home canned salmon but any will do

  • 2

    Tbs butter

  • 1

    medium onion chopped

  • cup cracker crumbs

  • 2

    eggs beaten

  • ¼

    cup chopped fresh parsley

  • 1

    tsp dry mustard

  • 3

    Tbs shortening

Directions

Drain salmon, reserve 3/4 cup liquid. Flake meat. Melt butter over medium high heat in a large skillet. Add onions and cook until tender. In a medium bowl, combine onions with the reserved salmon liquid and 1/3 of the crumbs, eggs, parsley, mustard and salmon. Mix until blended and form into 6 patties.Coast patties with remaining cracker crumbs. Melt shortening in a large skillet over medium heat. cooke patties until browned, then carefully turn and brown on the other side. Remove from skillet, enjoy! 441 calories 29 g fat 133 mg cholesterol
