Ingredients
- 1 pound boneless, skinless chicken breasts, visible fat removed.
- 3 tsp extra-virgin olive oil, divided
- Salt and pepper
- 3 tbsp nonfat plain yogurt
- 3 tbsp dijon mustard
- 1/3 cup chopped celery
- 1/3 cup black seedless grapes, cut in half
- 1/3 cup chopped red apples
Preparation
Step 1
Preheat a grill to high heat.
Rub chicken on all sides with 1 tsp olive oil. Season to taste with salt and pepper. Grill on high for 3 to 5 minutes per side, or until the chicken is no longer pink inside. Let the chicken cool, then cut into bite-sized cubes.
Meanwhile, in a large glass or plastic mixing bowl, whisk together the remaining 2 tsp olive oil, yogurt and mustard. Add chicken, celery, grapes and apples. Gently toss the mixture well to combine. Season to taste with salt and pepper.
