Zucchini Brownies

Ingredients

  • 1 ⁄4 c applesauce
  • 1 ⁄4 c butter
  • 2 eggs
  • 2 tsp vanilla extract
  • 11 ⁄2 c granulated sugar
  • 1 ⁄2 c unsweetened cocoa
  • 1 medium zucchini
  • 2 c all-purpose flour
  • 1 tsp kosher or sea salt
  • 11 ⁄2 tsp baking soda
  • 1 ⁄4 c chocolate chips

Preparation

Step 1

Preheat over to 350°F. Add applesauce, butter, eggs, vanilla, sugar, cocoa, and zucchini to blender and secure lid. Add flour, salt, and baking soda to jar and secure lid. Press "Pulse" 4-6 times or until all flour is incorporated.

Pour into a greased 9 x 13 inch baking pan. Bake for 25-30 minutes. Remove from oven, and cover with chocolate chips, if desired.
