Family sized Chicken Cheese Steak

The key to creating perfectly cook chicken for this sandwich is to make sure the pan is hot and large enough for the chicken to lie flat when it cooks. It's particularly important when you're cooking without a lot of fat. A cold pan or a heap of chicken will peven the meat from getting that great browned flavor and color. So turn up the heat like we do in my hometown of Philly!

Ingredients
- 1 (8oz) whole wheat or multigrain baguette
- 1 pound trimmed boneless, skinless chicken breasts
- Olive oil spray
- 1 c. slivered white onion
- Salt to taste
- Ground black peper, to taste
- 4 (3/4oz) slices light 2% yellow American cheese, each
- cut in half crosswise
- 1/4 c. no salt added ketchup (i used Heinz)
- 3 tbsp sliced, pickled hot chile peppers or pepperoncini,
- or to taste

Preheat oven to 400. Cut a piece of aluminum foil a couple of inches longer than the baguette. Cut the baguette as you would cut a roll to make a sandwich, then wrap it in the foil.
Shave the chicken by holding a very sharp knire at a 45 degree angle and cutting slivers frim the breasts, basically tearing the chicken until it's all shaved-it should be much more finely cut than if it were simply sliced. Place the baguette in the oven to warm, about 10 minutes.
Place a large nonstick skillet over medium-high heat. When hot, lightly mist with spray. Add the onoin and cook, stirring, until tender, 6-9 minutes. Transfer to a large bowl and cover to keep warm.
Return the pan to high heat. When hot, mist agian with the spray and add half of the chicken. Season with salt and pepper. Cook, pulling aprat the chicken shavings with 2 spatulas, until no longer pink and lightly browned in places, about 2 minutes. Transfer to the bowl with the onion. Repeat with the remaining chicken. Reduce the ehat to low and return all the chicken and the onion to the pan until warmed.
Unwrap the gabuette. Add the cheese slices, evenly, side by side. Add the chicken mixture, packing it into the sandwich. Top with the ketchup, then the peppers. cut crosswise into 4 equal sandwiches and serve.
