PIEROGI - POTATO & CHEESE FILLING

  • 8 - 9 Medium potatoes
  • 4 slices American cheese
  • 6 tablespoons Margarine
  • 1 small Onion

Step 1

Peel potatoes and cut into cubes and cook in lightly salted water for 20 minutes or until soft. Cut cheese into small pieces and set aside. Dice onion into small pieces. Melt margarine over medium heat, add onions and saute 5 minutes or until soft (but not brown).

Place drained hot potatoes into a food mill to mash (or use a hand masher – do not use an electric hand mixer). Potatoes should look “dry”– quickly add diced cheese and onion/margarine mixture, season with salt and pepper to taste and blend well by hand.

Spread potato mixture on a flat plate to cool thoroughly before using.
