Chestnut Soup

Ingredients

  • 1/2 pound Butter
  • 2 cup onion; chopped
  • 1-1/2 cups carrot; chopped
  • 2 pound chestnuts
  • 4 qt chicken broth
  • 1 qt Milk or cream at room temperature
  • 1/2 cup flour
  • 1/4 teaspoon white pepper
  • 1 tablespoon sale (omit if broth is salted)

Preparation

Step 1

Melt butter in 8 quart pot. Saute onions, add carrots, broth, chestnuts,
pepper, and salt. Simmer 30 minutes. Cool slightly and puree in blender.
Dissolve flour in milk/cream using whisk. Blend into soup and cook until
thick.
