Pears with Maple Cream
A surprisingly easy, rich dessert. Ginger in syrup is available at the supermarket or gourmet grocery stores.

Ingredients
- 4 ripe but firm Anjou pears, peeled
- 8 chopped dates
- 2 tbsp (25 mL) minced ginger in syrup
- 2 tsp (10 mL) grated orange rind
- 1/4 cup (50mL) white wine
- 1/2 cup (125 mL) maple syrup
- 1 cup (250 mL) whipping cream
- 1/2 tsp (2 mL) nutmeg, optional
Preparation
Step 1
1. Preheat oven to 375°F (190°C). Cut top off pear. Scoop out core with a melon baller. Combine dates, ginger and orange rind. Stuff into pear core. Lay or stand pears in baking dish.
2. Combine wine, maple syrup and whipping cream and pour over pears. Bake for 15 minutes, basting and turning occasionally or until pears are tender. Sprinkle with nutmeg.
3. Pour basting sauce into pot and boil 5 to 7 minutes on high heat or until thickened slightly. Place pear in centre of plates spooning the sauce around it or place in balloon wine glasses and pour sauce over. Serve warm or cold.
