Meat Loaf (GF)

Ingredients

  • 2 lbs. ground chuck
  • 1 onion, chopped
  • 1 egg
  • 2 tbsp. tomato paste
  • 1 1/2 tsp. salt
  • 1 tsp. pepper
  • 1 small potato, unpeeled and grated

Preparation

Step 1

1. Preheat oven to 375F.

2. In large bowl, combine all ingredients and mix well. Place mixture in 9x4 loaf pan.

2. Bake 1 hour and 20 minutes, until cooked through. If you have a meat thermometer, meat loaf should reach temperature of 160F.
