Ingredients

  • 1 lb. ground beef
  • 1 can corn, drained
  • 1 can ( 14 oz.) diced tomatoes
  • 1 can ( 15 oz.) kidney beans, rinsed and drained
  • 1 can ( 4 oz.) green chilies, drained
  • 3/4 cup dried elbow macaroni
  • 2 tsp. chili powder
  • 1 cup water
  • cumin to taste (Optional)

Preparation

Step 1

Cook beef, drain. Stir in rest of ingredients. Bring to a boil, reduce heat and simmer covered 12-15 minutes or until macaroni is tender. Sprinkle each serving with cheese if desired.
