Black bean & Pumpkin Soup P 1

Ingredients

  • 2 x 15 oz. cans of blacks beans (drained and washed)
  • 2 x 15 oz. cans of pumpkin puree
  • 1x carton of organic low sodium chicken broth (4 cups) OR homemade stock
  • 1 x medium yellow onion, diced
  • 2-3 tbsp. of Xylitol
  • 1 tbsp. cumin (or more to taste)
  • Salt and pepper to taste

Preparation

Step 1

Dice onion. Heat in semi- large soup pot with a little of the broth, on medium high heat and sauté the diced onion for 3-5 minutes til clear. Add cumin and stir for 30 seconds. Then add the chicken broth, drained beans, xylitol, and pumpkin puree. Bring to a boil and simmer for 20-30 minutes. Let cool slightly (enough to blend mixture). Then, puree half of the soup in a blender or with a hand blender.

It makes about 9 cups of soup.
