Ingredients

  • 2 pounds red potatoes with skins on
  • 1/4 cup finely chopped garlic
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 cup pecorino romano cheese or parmesan cheese
  • 1/2 cup butter cut into pieces and semi soft

Preparation

Step 1

1. Wash potatoes and place them in a large pot. Cover with cold water and bring to a boil. Reduce heat to low and cook until the potatoes are tender.

2. Drain potatoes and transfer to a large bowl. Add the rest of the ingredients and mix with a mixer using a metal whip attachment until all the ingredients are incorporated.
