Ingredients

  • 1

    pound GROUND BEEF

  • 1

    large ONION, chopped

  • 2

    15 oz cans CHILI BEANS, drained & rinsed (or kidney beans)

  • 1

    15 oz can BLACK BEANS, drained & rinsed

  • 1

    15 oz can CORN, drained

  • 1

    15 oz can diced TOMATOES

  • 1

    can ROTEL (tomatoes with chiles)

  • 4

    of the empty 15 oz cans of WATER**

  • 1

    package dry TACO SEASONING

  • 1

    package dry RANCH DRESSING MIX (can leave out)

Directions

Brown meat in soup pot then add chopped onions and cook until softened. Add the rest of the ingredients and simmer for 20-30 minutes. **You can also use one or two cans of low sodium beef broth plus water. Actually this is very forgiving, you may want to add more water depending on how “thick” or “thin” you like it!
