Ingredients
- 1 1/3 cups water
- 1 tablespoon chopped fresh dillweed
- 1/4 teaspoon salt
- 2/3 cup uncooked long-grain rice
- 1/2 cup diced zucchini
- 1 teaspoon grated lemon rind
Preparation
Step 1
Combine first 4 ingredients in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 10 minutes. Stir in zucchini; cover and cook 8 minutes or until liquid is absorbed. Stir in lemon rind.
