Greek Salad

Ingredients

  • DRESSING:
  • 1 bag mixed salad greens
  • 1 cup ripe olives
  • Greek peppers if you like
  • 3 plum tomatoes, cut up
  • 1 small red onion, thinly sliced
  • 1/2 cucumber, peeled and cut unto chunks
  • 8 oz feta cheese (I use the basil and tomato variety)
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 minced garlic clove
  • 1 tsp dried oregano
  • 1/4 tsp salt and pepper

Preparation

Step 1

Toss greens, olives, tomatoes, onion, cucumber and greek peppers with dressing. Srinkle feta cheese over just before serving.
