Blonde Oatmeal Cookies
- 3 T. butter, melted
- 1/4 c. brown sugar blend (such as Splenda)
- 1 large egg
- 2/3 c. uncooked quick cooking oats
- 1 T. sugar
Preheat oven to 375 degrees.
Combine first 3 ingredients in a medium bowl, stirring with a whick until smooth. Stir in oats and flour.
Drop by level tablespoonfuls onto a baking sheet lined with parchment paper. Flatten slightly with dampened fingers; sprinkle with sugar. Bake at 375 degrees for 7 minutes or until lightly browned. Transfer parchment paper to wire rack and let cool 15 minutes.
