MSL Roasted Garlic

Ingredients

  • 6 to 8 heads of garlic
  • olive oil
  • salt and freshly ground pepper to taste
  • juice of one lemon (if storing the roasted garlic)
  • fresh herbs (optional)

Preparation

Step 1

Heat oven to 400 degrees. Place heads in a baking dish and sprinkle with olive oil. Sprinkle the garlic heads with salt and pepper.

Place the baking dish in the center of the oven and roast the garlic heads until they are soft to the touch, about 1 hour.

Cut off the tops of the garlic heads, squeeze the soft garlic cloves out of their papery sheets, and use immediately. If you would like to store the roasted garlic, squeeze the cloves into a jar, cover with olive oil and add lemon juice. Flavor with herbs. If desired, seal and store in the refrigerator. The roasted cloves will last about ten days when stored this way.
