Variety Bread (Brooke Mank Pryor)

Ingredients

  • 3 1/2 cups flour
  • 3 cups sugar
  • 1 teaspoon baking soda
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup oil
  • 4 eggs
  • 2 teaspoons cinnamon
  • 4 ripe bananas, mashed
  • 1 cup chopped walnuts
  • 2/3 cup water

Preparation

Step 1

Mix dry ingredients in large bowl except for sugar. Set Aside. Cream sugar, oil and eggs until creamy; beat well. Add bananas and mix well. Beat on low speed and add dry ingredients gradually. Stir in nuts. Fill batter 2/3 full in greased loaf pans.
Pour batter evenly into prepared loaf pan. Sprinkle a little sugar on batter before baking. Bake at 325 until browned and a toothpick inserted in the center comes out clean, about 1 hour and 15 minutes. Cool bread in the pan on a wire rack for 10 minutes. Remove bread from oven. Cool completely on wire rack. Slice and serve with butter . I think this makes 2- 9x5x3 inch loaves. I like to make small loaves for individual gifts at christmas time. This makes 9 of the small loaves. Bake these at 325 for 40-45 minutes.

2 cups pumpkin
2 cups zuchinni
2 cups peaches
2 cups applesauce
2 cups crushed pineapple
1 cup raisins and 1 cup nuts
2 cups shredded carrots

Eliminate cinnamon and try strawberries, blackberries, etc

2 cups of almost any fruit will work, grated or mashed
