    cups sugar

    cup vegetable oil

    16-oz. can pumpkin

  • 2

    cups flour

    tsp. baking powder

    tsp. cinnamon

    tsp. salt

    tsp. baking soda

  • Frosting:

  • 4-1/2

    oz. cream cheese, softened

  • 3/4

    cup butter, softened

  • 1-1/2

    tsp. vanilla

  • 3

    cups confectioners sugar

Directions

Beat eggs, sugar, oil and pumpkin in a bowl until light and fluffy. Combine flour, baking powder, cinnamon, salt and soda. Add to pumpkin mixture, and mix thoroughly. Spread batter in an ungreased 15x10x1-inch jelly roll pan. Bake 350 degrees for 25-30 minutes and frost. Frosting: Blend cream cheese and butter. Add vanilla and sugar, beating until thoroughly blended. Frost cooled cake.
