Ingredients
- Crust:
- 1-1/4 cups vanilla wafers finely crushed
- 1/4 cup sugar
- 6 tablespoons butter melted
- Filling:
- 1 envelope unflavored gelatin
- 1/4 cup water
- 4 eggs separated
- 1 cup sugar divided
- Dash salt
- 1/2 cup fresh Key lime juice
- 2 tablespoons key lime peel, grated
- Sweetened whipped cream
Preparation
Step 1
Preheat oven to 400 degrees. Mix crust ingredients thoroughly and press into bottom and sides of 8" pie pan. Bake in oven for 8 to 10 minutes. Cool.
For filling, dissolve gelatin in water for 5 minutes. In top of double boiler, beat egg yolks, 1/2 cup sugar, add salt. Cook, stirring until thickened. Add gelatin. Mix well. Add key lime juice and peel. Chill in refrigerator 1 hour.
Beat egg whites at room temperature until soft, and very gradually beat in remaining sugar. Fold mixtures together and pour into pie crust. Chill at least 2 hours. Top with sweetened cream.
