Ingredients

  • 1 cup water
  • 1 1/2 TB mortens tender quick salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp hickory smoke salt
  • 1 tsp mustard seed
  • 1 1/2 tsp ground pepper
  • 2 lbs ground beef not less than 70 % lean

Preparation

Step 1

In bowl combine water, tender quick salt, onion powder, garlic powder, hickory salt, mustard seed, ground pepper. Add ground beef mix thoroughly. Shape into 4 logs 1 1/4 inches in diameter and 8 inches long. wrap in foil shiney side towards the meat. Refrigerate for 24 hours with fork prick holes in foil all along the bottom of rolls. Put 1/2 inch water in bottom of broiler pan. Place rolls on broiler pan bake 90 minutes. refrigerate before serving. store in frig or freezwe for one month.
