Pineapple Cottage Cheese Mold

Ingredients

  • 1 package unflavored gelatin
  • 1/4 cup cold water
  • 1 pint cottage cheese
  • 1 tbsp lemon juice
  • 1 cup canned pineapple, drained and crushed
  • Fresh whole cranberry sauce

Preparation

Step 1

Soften gelatin in cold water and dissolve over hot water. Break up cottage cheese with hand beater or electric mixer. Add pineapple, salt, lemon juice and dissolved gelatin. Pour into 1-quart mold and chill until set. Top mold with whole cranberry sauce to serve.
