Fried Sage Leaves

While the recipe calls for pineapple sage, any sage leaf will work.

Ingredients

  • 25 medium size Sage Leaves (Pineapple sage if possible.)
  • 1 egg
  • 1 tsp buttermilk(or heavy cream)
  • 2/3 Cup Panko
  • Dash of Salt and Pepper
  • Olive Oil (garlic or white truffle flavor works well)

Preparation

Step 1

1. Snip off 6 medium Pineapple Sage leaves. Wash and pat dry with a paper towel.
2. Grind or crush the Panko into a fine powder.
3. Mix an egg and buttermilk in a small bowel.
4. Heat oil in pan to 365-375 degrees
4. Dip sage leaves in egg, then panko, and slip into hot oil about 3-4 at a time for about 4 seconds/side
