Chocolate Chip Muffins

Ingredients

  • 1 egg
  • 1/2 cup milk
  • 1/3 cup oil
  • 1/2 cup sugar
  • 1 1/2 cups flour
  • 2 t. baking powder
  • 1/2 t. salt
  • 1/2 cup mini chocolate chips
  • (you can substitute butterscotch chips for chocolate chips)

Preparation

Step 1

Preheat oven to 375 degrees. Grease a 12-cup muffin pan. Beat egg in a large bowl until frothy. Beat in milk and oil, about 2 minutes.
Mix sugar, flour, baking powder and salt together in a separate bowl. Add to egg mixture; mix just until moistened.
Fold in chocolate chips. Fill muffin cups 2/3 full.
Bake for 20 minutes or until muffins are golden brown and a toothpick inserted in center comes out clean. Serve muffins warm.
