Cauliflower Gratin

Ingredients

  • 1 medium-large cauliflower; about 1-3/4 pound
  • 2 tablespoon extra virgin olive oil
  • 1 cup onion; chopped
  • 1-2 tablespoon capers; drained
  • 1/2 cup fine breadcrumbs
  • 1/4 cup parmesan or Swiss Cheese; grated
  • freshly ground black pepper

Preparation

Step 1

Heat oven to 425°F.

Cut the cauliflower into 3/4 inch florets (about six cups) and spread on a
baking pan that is lined with foil. Toss with oil to coat and roast 10 - 15
minutes, until tender.

Shake the pan to loosen the cauliflower; sprinkle with the onion and
capers. Roast 10 minutes more. Remove pan from oven and transfer the
vegetables to the baking dish.

Combine bread crumbs cheese and pepper; sprinkle over the top. Ten minutes
before serving, heat broiler. Broil five to eight minutes until the top is
crisp and brown (watch so it doesn't burn). Serve hot, warm or at room
temperature.
