Ingredients
- BATTER
- 4 large eggs
- 3/8 cups finely grated parmasean cheese
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/2 cup fresh parsley chopped
- FISH
- Oil, for frying
- 3 (6 ounce) pieces swordfish
- Flour, for dusting the fish
- 3 cups crushed potato chips
- ASSEMBLY
- 3 fresh rolls
- Thinly sliced onion
- Thinly sliced tomato
- Lettuce
- Tartar sauce
- Lemon wedges

Preparation
Step 1
1. Whisk batter ingredients together in a bowl.
2. Heat 4 inches of oil in a heavy bottom pot.
3. Flour in one dish, crushed chips in another.
4. Fish into flour, then batter, then chips.
5. Drop into oil and cook until fish floats (3-4 minutes).
6. Drain on paper towel, then assemble.
