Rice Salad

Ingredients

  • 1 cup uncooked rice
  • 6 tbs oil
  • 3 tbs white or cider vinegar
  • 1 tsp salt
  • pepper to taste
  • 1/2 cup green pepper, chopped
  • 1/4 cup parsley
  • 1/4 cup onion, chopped
  • 1 cup drained cooked pea

Preparation

Step 1

Cook rice according to directions. While rice cooks, combine, oil, vinegar, salt, pepper. While rice is hot, pour dressing over top - fold in rest of ingredients. Cover & refrigerate.
