eggplant (1 lb.) sliced
lb. sliced fresh mushrooms
cup grated parmesan cheese
cups shredded mozzarella
jar (26 ounces) spaghetti sauce
1. Heat oven to 400 degrees. Place 1/2 each of the eggplant and mushrooms in 9x13 baking pan, sprayed with cooking spray; top with 1/3 of each cheese. 2. Repeat layers. 3. Top with sauce; cover with foil. 4. Bake 35 minutes. Sprinkle with remaining cheeses. 5. Bake uncovered, 5 minutes, or until mozzarella cheese is melted.
