Ingredients
- 1 (8 oz) log goat cheese
- 1 cups rustic salsa
- 24 slices French bread
- Rustic Salsa
- 1 tbs olive oil
- 6 large Roma tomatoes - cut in 1/2 lenghtwise
- 2 tomatillos - husked, cored and quartered
- 1 medium red onion, sliced into thick slices
- 2 tbs finely chopped cilantro
- 2 garlic cloves, minced
- salt and pepper
- 1/2 tsp red chile powder
- 1/2 cup chicken stock

Rustic Salsa
Heat oil in a large skillet over medium heat. Add the tomatoes and tomatillos. Saute for 6-8 minutes. Stir in the onion, cilantro and garlic and continue cooking for 8 minutes until the tomatoes and onion are soft. Stir in the salt, pepper and chile powder. Remove from heat and cool.
In a food processor and puree the cool vegetable mixture, but leave some texture. Add the stock. Pour mixture into a storage container and cool. Refrigerate. Spoon over goat cheese.
