Chicken and Basil Rolls with Tomato Mayonnaise

Ingredients

  • 1/2 cup mayonnaise
  • 2 tbsp chili sauce or ketchup
  • 1 tsp lemon juice
  • pinch white or black pepper
  • 1 plum tomoto, seeded and finely chopped
  • 2 tbsp minced green onion
  • 4 boneless chicken breasts
  • 2 tbsp extra-virgin olive oil
  • 1/2 tsp each salt and pepper
  • 1 cup lightly packed basil leaves

Preparation

Step 1

In bowl, whisk together mayonnaise, chili sauce, lemon juice and pepper; mix in tomatoe and green onion. (make ahead; cover and refrigerate for up to 24 hours)

Place each chicken breast between waxed or parchment paper;with mallet, pound to 1/4 inch thickness. Brush 1 side of breasts with half oil; sprinkle with salt and pepper. Cover with basil leaves, roll up into long cylinders. Secure with toothpicks.

Place on baking sheets; brush with remaining oil. Bake in 425 degree oven for about 18 minutes or until no longer pink inside. Let stand for 10 minutes. (Make ahead - Wrap and refrigerate for up to 24 hours)
Cut into 1/2 inch thick slices; serve with tomato mayonnaise.
