Apple Cranberry Slow Cooker Pork - Allergy Free

A sweet slow cooker pork recipe that is perfect over a bed of steamed brown rice. It contains no dairy, no soy, no egg, no nuts and no gluten.

Ingredients

  • 1 3-4 lb. pork shoulder roast
  • salt and pepper to taste
  • 1 cup cranberry sauce (with whole berries or smooth)
  • 1/4 cup honey
  • 1/4 cup apple jelly
  • 1/8 tsp ground cloves
  • 1/8 tsp nutmeg
  • optional steamed brown rice

Preparation

Step 1

1. Place roast in slow cooker and season with salt, pepper, and spices.
2. In a small bowl mix the rest of the ingredients and stir well.
3. Pour mixture over pork.
4. Cook on low 6-8 hours.

optional. Pour liquid from finished pork into a small saucepan. Add 1 tablespoon of cornstarch and mix well over medium heat until boils. Continue stirring until sauce thickens.

Serve pork and sauce over a bed of brown rice. YUM!
