Ingredients
- 1 French baguette
- 18 slices of bacon (I cut 1 slice into 4 to equal 1 slice- this gave me 4 appetizers per person for 4 folks)
- 3 leeks
- 2 tbsp butter
- Salt & pepper, to taste
- 1-1/2 c whipping cream
- 6 tbsp grated Gruyere cheese(or a bit more), also Jarlsberg was recommended.
Preparation
Step 1
Thinly slice 18 slices from baguette (probably about 1/2 a loaf) and toast them lightly on one side. Sautee bacon pieces until golden. Finely slice white and light green portions of the leeks. Par boil them for 3 minutes, drain well. Discard bacon fat. Heat butter, add leeks, salt & pepper. Cover and cook until tender on low heat, tossing from time to time. Add the cream and cook until reduced in volume for a thick, creamy, well rounded sauce. (I think this could easily be done the day before and just popped into fridge.) Top each slice on the non toasted side with 2 cooked bacon slices. Top with 1 tbsp leek mixture & 1 tsp cheese. Broil 1-2 mins.
Suggestions...could easily add-garlic, basil flat leaf parsely
