Mexican Lasagna

Ingredients

  • 2 c diced chicken
  • 2 Tbsp chili powder
  • 1 onion, chopped
  • 1 15 ox can black beans, drained
  • 1 cup salsa
  • 1/2 cup diced green peppers
  • 1 can of diced tomatoes, or fresh tomatoes in season
  • 1 cup frozen corn kernals or 1 can drained
  • salt
  • 8 8" tortillas
  • 2 cups shredded cheddar

Preparation

Step 1

Place two tortillas on the bottom of a 9x13 pan. Add ingredients layer just like regular lasagna.

Bake for 30 minutes, 350 degrees
