Ingredients

    cup dried apricots

  • 1/2

    cup butter

  • 1/4

    cup sugar

  • 1 1/3

    cups flour, divided

  • 1

    cup brown sugar

  • 2

    eggs, well beaten

  • 1

    tsp vanilla

  • 1/2

    tsp baking powder

  • 1/4

    tsp salt

  • 1/2

    cup nuts, chopped

Directions

1. Cover apricots with water and simmer for 10 minutes. Drain, cool, and chop apricots into small pieces. 2. In a mixer bowl, combine butter, sugar, 1 cup flour and mix until crumbly. 3.Press mixture into a 8" pan. Bake at 350F for 20 minutes. 4. In a mixer bowl gradually beat brown sugar into eggs and vanilla. Then add remaining 1/3 cup flour, baking powder, and salt. Mix well. Last, add apricots and nuts and mix well. 5. Spread mixture over first layer. Bake at 350F for 30 minutes. Cool and cut into bars. Dust with powdered sugar.
