Nancy's Batter for Boneless Fried Chicken

I've had this recipe for a long time and need to make it more often!

Ingredients
- 1 egg
- 1 cup flour
- 1 cup milk
- 1 teaspoon baking powder
- 1 teaspoon salt
Preparation
Step 1
Mix batter ingredients together but do not beat. Chicken can be put in batter and refrigerated until ready to deep fry. Fry at 375 degrees until golden brown and chicken is cooked through.

MY NOTES: Mom suggested using 3/4 cup flour and 1/4 cup cornstarch to make the batter crisper.
Mom's other suggestion one day when we were out for lunch chatting - "Dust chicken pieces with flour before putting in the batter to stem excess moisture."
