Sun's Carbonara

Ingredients

  • 9 oz fresh Linguine
  • 4 eggs (extra large or better)
  • 1 cup freshly grated Parmesan cheese
  • 3 Italian turkey sausages links casing removed about 8 to 10 oz.
  • 1 pound asparagus, cut into 1 in lengths
  • 1/4 teaspoon salt
  • freshly ground pepper

Preparation

Step 1

1 heat a large pot of water to a rapid boil well salted. Add pasta and cook

Break eggs into a large bowl and add parmesan - Whisk to combine well - put aside

Cook sausage break up to small pieces in a large skillet and cook until done about 10 minutes

Blanch Asparagus and then add to sausage

Drain pasta and add egg mixture and mix well to coat all and add sausage and asparagus.
