Ingredients

  • ) Cover steak with mixture of:
  • 1 ) set out a large, heavy skillet and tight fitting cover.
  • 2 ) wipe with a clean damp cloth and lay out flat on surface 1 1/2 lb. round steak cut 1/2" thick
  • 1 clove garlic - finely sliced
  • 1 tsp. grated Parmesan Cheese
  • 1 hard cooked egg chopped
  • 1/2 tsp. chopped parsley
  • 2 slices bacon - 1" pieces
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 4 ) Roll up steak to enclose misture and tie securely
  • 5 ) Heat in skillet until onions are transparent - 1/4 cup olive oil - 1 small onion sliced
  • 6 ) Add steak roll and slowly brown on all sides
  • ) Meanwhile combine:
  • 2 1/2 cups ( No. 2 can tomatoes seived)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 8 ) Slowly add tomato mixture to browned steak

Step 1

Cover skillet and simmer about 1 1/2 hours or until steak is tender. Remove string and Bay leaf.
Slice and serve

Variation: Follow recipe - add 1/2 cup dry red wine and a few grains of nutmeg to the tomato mixture
