Ingredients
- 2 Tbl yeast
- 1 Tbl brown sugar
- 2 cups warm water
- 2 Tbl butter
- 1 1/2 Tbl kosher salt
- 6 cups all purpose flour

Proof the yeast e
Proof the yeast in the water along with the brown sugar and butter. About 5 minutes. Then add the salt and half of the flour mixing well with a stand mixer. Add the rest if the four to make a shaggy dough. Turn the dough out onto the counter and hand knead for 10 minutes. Shape into rolls and let rise at least 1/2 hour. Simmer 6 cups of water with 4 Tbl baking soda together. Gently place 3 rolls in the simmering water for 1/2 to 1 minute on each side. Drain. Place on cookie sheet score the tops of the rolls and bake at 425 for 15 minutes or until rich golden brown.
Before baking more kosher salt may be added to the top.
