Parmesan Chicken

Ingredients

  • 1 whole boneless chicken breast halved
  • 1/2 c. plus 1 tbsp. freshly grated Parmesan
  • 1/2 c. flour
  • 3 tbsp. salted butter
  • 1/4 c. dry vermouth

Preparation

Step 1

Dredge the chicken in 1/2 cup Parmesan, putting cheese to flesh then dredge in flour lightly shaking off excess. In a non-stick skillet heat butter until foam begins to subside and it saute the chicken over moderately high heat until golden on each side. Transfer the chicken to baking dish. Pour vermouth on and sprinkle with remaining parmesan. Bake covered loosely in 325 degrees oven for 15 minutes. Serve w/cherry tomatoes sauteed w/butter and Worcestershire sauce and scallion rice (rice tossed w/ scallion and butter)
