White Chicken Chili

Ingredients

  • 3 lbs. boneless, skinless chicken breast
  • 1 stick butter
  • 1/2 cup flour
  • 1 quart chicken broth
  • 1 pkg. white chicken chili mix
  • 3 15 oz. cans cannelini beans, drained
  • 3 ribs celery, chopped
  • 10 oz. pepper jack cheese, shredded

Preparation

Step 1

Drizzle chicken with salt, pepper and olive oil. Bake chicken at 350 degrees for 1 hour. Remove from oven. Let cool. Chop chicken in small pieces. Melt butter in large pot. Add flour and stir to combine removing lumps. Slowly add broth. Add cannelini beans and chicken to pot. Add white chicken chili seasoning and celery. Cook 15 minutes on medium heat. Add cheese and cook on low for 30 more minutes, stirring occasionally.
