Grilled Flank Steak with Cebollitas

Ingredients

  • 1 lb. flank steak
  • 1/4 c. olive oil
  • 1 T. minced garlic
  • 1/4 c. fresh lime juice
  • 1/4 c. chopped cilantro
  • 1 1/2 t. salt, plus more for seasoning
  • 1 t. pepper
  • 1 bunch green onions, plus 1/4 c. chopped
  • Olive oil for drizzling

Preparation

Step 1

Combine steak, 3 T. oil, garlic, 2 T. lime juice, cilantro, salt, pepper, and 1/4 c. chopped onions. Marinate 45 minutes to overnight.

Heat grill to 400-425.

Remove as much marinade as possible. Grill 5 minutes per side. Rest 10 minutes under aluminum tent.

Trim green onions and toss with remaining olive oil and salt to season. Toss with remaining 2 T. of lime juice.
