Ingredients

  • 1 Tbsp. vegetable oil
  • 1 pkg. (about a pound) chicken
  • 1 cup onion, opt.
  • 11/2 cup (2 small) red peppers
  • 1/2 cup (4 oz. can) diced green chilis
  • 1 pkg. (1.25oz.) Ortega taco seasoning mix
  • 2 cups (16oz.) thick & smooth taco sauce, divided
  • 1 pkg. (10) soft taco-size flour tortilla, divided
  • 2 cups mexican blend shredded cheese, divided

Preheat oven to 375F. Grease 13 x 9 inch baking dish.

Heat vegetable oil in large skillet over medium heat. Add chicken, cook stirring occasionally, for 5-6 minutes or until no longer pink, drain. Stir in onion, peppers, chilies and seasoning mix. Reduce heat to low, cook, stirring occastionally, for 3-4 minutes or until vegetables are slightly tender.

Spread 1/2 cup taco sauce over bottom of prepared baking dish. Cover with 5 tortillas. Spread with half of meat mixture and 1/2 cup taco sauce. Sprinkle with 1 cup cheese. Repeat with remaining ingredients.

Bake for 15 to 20 minutes or until heated through and cheese is melted.
