- # 1 lb Lean ground beef (meat case)
- # 14 3/4 ounce canned cream-style corn (canned vegetable aisle)
- # 11 oz Mexican-style whole kernel corn, drained
- # 1 tsp Ground chipotle chile pepper or chili powder (or 1 tablespoon chili powder) (spice aisle)
- # 2 1/2 C Prepared mashed potatoes (deli case)

Directions
1. Heat oven to 375°F. Brown 1 pound of lean ground beef in a little oil. Season with 1 teaspoon ground chipotle chile pepper (or 1 tablespoon chili powder), 3/4 teaspoon salt, and freshly ground black pepper to taste. Add a 14.75-ounce can of cream-style corn and an 11-ounce can (drained) of Mexican-style whole kernel corn. Pour into a baking dish. Spread 2 1/2 cups mashed potatoes over top. Bake until bubbly around the edges, 15 to 20 minutes, and then broil 2 to 3 minutes to brown the top.
