Spinach, Cheese & Egg Casserole

  • 2 2 2 bunches fresh spinach
  • 2 2 2 cups cottage cheese
  • 1 1/2 1 1/2 1/2 cups cheddar cheese, grated
  • 3 3 3 eggs
  • 1/4 1/4 1/4 cup flour
  • 1 1 1 tsp salt
  • 1/2 1/2 1/2 cup butter, melted

Step 1

Clean the spinach in cold water and remove the stems. Tear the leaves into 1 inch pieces. Place the spinach leaves, cottage cheese and cheddar cheese in a large mixing bowl.

In a small bowl, combine the eggs, flour, salt and butter, mixing well until all the ingredients are melded, pour over the spinach mixture. Mix well with a wooden spoon.

Pour mixture into the slow cooker and cook covered on high setting for 1 hour. Stir well after the hour is up and reduce heat to low steting.

Cover and cook 4-5 additional hours.
