Ingredients
- 4 skinless chicken breast halves, butterflied and pounded
- 2 eggs, slightly beaten
- 1 tablespoon water
- 1 tablespoon oil
- 1/2 cup Carbquik breading mix
- 3/4 cup grated Parmesan cheese, divided
- 8 slices Mozzarella cheese (or 1 cup shredded)
- Low-Carb tomato sauce, to taste
- Oil
Preparation
Step 1
-Combine eggs, water and 2 teaspoons oil; set aside.
-Combine breading mix and 1/2 cup Parmesan cheese.
-Dip chicken breast into egg mixture, then coat with breading mixture.
-Heat oil in heavy skillet. Brown chicken breast over medium heat, 6 to 8 minutes per side. Remove to a sheet pan or baking dish. Pour sauce over chicken.
-Top each breast with Mozzarella and remaining Parmesan. Bake in 350ºF oven 20 to 25 minutes or until cheese melts.
