Ingredients

  • 2 cups flour
  • 1 1/4 cup sugar (brown or white)
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups grated carrots
  • 1/2 cup raisons or cranberries
  • 1/2 cup nuts
  • 1/2 cup coconut
  • 1 apple peeled and grated
  • 3 eggs , 1 cup veg oil, 2 tsp vanilla

Preparation

Step 1

Preheat oven to 350 degrees. Combine first 5 dry ingredients in a large bowl and make a well in the centre for the next 5 ingredients ..combine. In a separate small bowl combine remaining ingredients and whisk together. Add to large bowl and stir. Using an ice cream scoop put 2 scoops in 12 large muffin tins or tall paper holders. Bake for 27 -30 minutes until spring back.
